Seems like I'm in between sizes. I'm 5'11" and 215. Should I go for the size 5?

5 is perfect for your height, although you do run the risk of it being a little tight around the midsection.
If I were you, I would probably order a 5, or do a 5 in pants and 6 in gi top. If you go back here:
http://www.karatedepot.com/karateuniform.html
you'll notice there are separates sold.

I believe that a 5 would be right on for you.

Nice Quality
I am 6' 270 lbs and I ordered a size 6. The fit is great and have plenty of room for movement. this has a great heavy duty quality to it and has a nice "snap". The pants were a little long but nothing a little hemming won't fix.

10 oz heavy weight karate gui review
I ordered two karate guis at the same time, but different sizes. When they both arrived, one was a pure white color and the other, larger size was an off white, almost cream color. The fabric was not the same on the larger size either. These gui's have to be ironed every time they are washed. I was hoping I could get away from ironing, but I guess I can not. I would not purchase these guis again.

Yes ironing is almost impossible get away from. If you want the least amount of ironing possible, go with a black, light weight gi. The heavier you go and especially with white uniforms, the more ironing required.
As for the colorations - certain gi are bleached very white, and others have a more natural (off white) color. It's tough to tell off of pictures which will be which, but sometimes it is specified in the item descriptors.
